Boxes and Crinkly Bags

 

The table we set at our house is undergoing a gradual change.

For one thing, this little guy is joining us now.

Because of him, some health issues, and a myriad of other reasons, we are changing up our diet.

Small changes, gradual changes, with some compromises here and there, but with a clear goal in mind.

No more processed (factory food) and more real food with real ingredients that we can pronounce.

We’ve made the switch to organic produce and are working towards meat raised humanely on small farms and ranches.

As we eat down our pantry and freezer we aren’t replacing the boxes and crinkly bags that live there now.

There have been some challenges along the way – mainly folks wandering into the kitchen looking for something to eat and finding more ingredients than food.  We’re all on different schedules around here and dinner is the only meal we share.

We’ve been working towards keeping the fridge and freezer stocked with prepared foods that just need to be heated up.  It just tends to get eaten up before we get enough stored back!

I’ve become a master of the frittata which uses up leftover veggies and the abundance of eggs we’ve been getting as the weather warms up and the chickens start laying.

We’re experimenting with recipes we find on the internet that replicate favorite snacks.  Some are wins, some are not…still looking for a Little Debbie Nutty Buddy substitute.

The pantry and freezer are getting low and that is causing me some anxiety.  Some of these choices aren’t cheap and money is always an issue.  I’m taking some deep breaths and reminding myself that any change in the right direction is better than not trying at all.

Don’t let perfection get in the way of better, right?

And reminding myself of the wins…last night’s dinner –  soup made from leftover chicken (free-range, organic chicken that spent its days roosting in a barn and and exploring the great outdoors)  home-made egg noodles  and lots of organic veggies…

There are no pictures of the soup because it was all eaten.  And every meal won’t be scratch-made like this because I’m just not that together.  But this one was and that’s a step in the right direction.

They are probably going to want to eat again tonight.  I probably should have thawed something.

 

 

Mother Earth News Fair

Today, we are off on an adventure.

We are road-tripping to Belton, Texas for the Mother Earth News Fair!

I am super excited that is so close (close is relative in Texas).

It almost seems epiphanous in light of the changes I am working on: zero-waste, a vegetable garden, healthier eating, a more minimalist lifestyle…

…trying to be more comfortable with who I am and working to worry less about what others think and more about being true to what I believe

Plus, a road trip!

But no junk food.

That’ll be a challenge.

Challenge is good…

Today’s post shall be short because I am hungry.

And there are Rice Krispies treats in the house.

My sister bought them for my kids.

I love Rice Krispies treats so much.

They can’t live here with me.

I ate one…maybe two…

I’m lying.

I ate a lot of them.

Then I gave them to my daughter to hide them from me.

Tomorrow I shall talk about my problem(s) with food.

Now I will finish making my salad and my bowl of fruit

because that is a better decision

and will make me feel better in the long term.

The Research

After I got out of the hospital this last time (a second round of multiple hernias and intestinal obstructions plus diverticulitis), I took quite a while to recover enough for everything to return to normal. I quit eating meat because that seemed to be stressful for my digestive system and I was struggling with a loss of appetite.  I wanted to (and needed to) lose weight, but I knew that not eating wasn’t a good option.

I found that I didn’t miss meat all that much…except for maybe bacon.

I didn’t set out to become a vegetarian.  I definitely didn’t plan on becoming a vegan.  I didn’t even know what the term “whole food, plant based diet” meant.

It just sort of started and didn’t stop.

Then one night when hubby was working late and I couldn’t find anything good to watch on Netflix, I happened upon the documentary section and started browsing…

I don’t remember which one I watched first, but here’s a list of what I’ve watched so far:

  • What the Health
  • Sustainable
  • In Defense of Food
  • Plant Pure Nation
  • Food Choices
  • Food, Inc.
  • Fat, Sick and Nearly Dead 1 & 2
  • Fed Up
  • Super Size Me
  • Engine 2 Kitchen Rescue

Most of these were watched while walking on the treadmill.  I found them to be very motivational!

Some of them seemed a wee bit crazy at first.  A very radical step away from cultural norms.  A lot of that seems more normal now that I’ve embraced this journey.  Some of them are still too crazy for me.

I’ve noticed some benefits other than health related ones so far…

Dishes are much easier when you aren’t cooking with animal based products and extra oils!  They pretty much just rinse clean.

The chickens and rabbit are very happy and well fed and the compost pile is filling up nicely.

And the amount of trash we are producing is significantly less.  We are recycling more efficiently and there is little that actually goes to waste.

Grocery shopping was harder the first couple of times we went after starting this.  Label reading took on a whole new meaning and many previously favorite items were reluctantly placed back on the shelf.  Then it became a sort of treasure hunt as we would read labels in the store and joyfully shout out, “We can eat this!” or “I found something!”.

Even though we thought we were pretty savvy shoppers, I was totally caught off guard at the amount of sugar (in various forms) that can be found in almost everything!  And how many ingredients does it really take to make bread, cereal or salad dressing?

Now the majority of our shopping is done in the produce section.  We shop for a rainbow of colors and I know words like phytochemicals and lycopene.

Our spice collection is growing beyond salt, pepper and garlic.  We still don’t like curry, but we’ll try it again at some point because our taste buds are slowly reawakening to natural flavors.  Smoothies with just fruit now taste too sweet to me and are reserved for dessert status.  Our added salt intake is greatly reduced.

I miss butter…on toast and potatoes and well, everything.  But, I don’t miss it as much as I did three weeks ago.  I’m sure my arteries don’t miss it at all.

This is challenging.

And interesting.

I think my mind is starting to wake up a bit as I pursue more knowledge about my food, my body and my health.

Good food for the body and the mind.

Steps in the right direction on this journey…

New Habits

I guess I was overly optimistic about keeping up with writing here.  It seems that so much is going on that I’m having trouble keeping up with everything.

The moderate depression is continuing with some good days and some not-so-good.  I just keep putting one foot in front of the other and continuing with the new plan or rather the new lifestyle…

Oh wait – I never got around to actually writing about that…

In short, I have committed to eating a whole food, plant based diet.  That’s basically a vegan diet with another restriction – very limited added oil of any kind.

If you want to know more, I was first introduced to the idea by watching “Forks over Knives” which is currently on Netflix.  It explains it much better than I ever could.

Why am I giving this a try you might ask?

Well, let me tell you…

When I first realized that I was having trouble with my vision and thousands of dollars later became aware that medical doctors were not going to be much help, I started by reading and researching and removed chemicals from my home…cleaning products, air fresheners, etc.

Then I started looking at the ingredients in our kitchen.  We’d been eating pretty healthy off and on depending on our income and my mood.  I am definitely a stress eater.

I was focused on subtracting items from our home that might be adversely affecting our health.

And that was all good stuff…as far as it went.

I never really stopped to think about what I needed to add.  I’m fairly knowledgeable about nutrition.  But now, I’m learning a lot more.  A lot more.

I believe in the ability of our bodies to heal themselves…if given the opportunity and resources.

I have hypertension, high cholesterol and triglycerides, am obese, suffer with anxiety and depression, have vision difficulties, and have had bad blood sugar readings in the past.  I take 3 medications and my blood pressure reading are rarely in the normal range…they are still high.  I am tired all the time.  I am not very happy.

I was not a winner in the “genetic lottery” of life.  The women in my family start having strokes early and often.  Hypertension starts for everyone on both sides at 30.  I made it to my mid-thirties.  I’ve been told that this is my lot in life.  Even by a doctor once.  I’m going to die from a heart attack or stroke.  That’s just the way it is.

What if that’s not true?

What if this is one area of my life where I can exert some control?

What goes into my mouth is my decision.  That’s been an empowering experience for me.  I’m juicing spinach, kale, carrots, tomatoes, and whatever other vegetable I have on hand for breakfast along with a bowl of oatmeal or whole grain cereal.  I’m eating vegetables, fruits, whole grain rice and other grains.  I’m not counting calories.  I’ve lost about 20 pounds.

I’m hitting at least 10,000 steps on my fitbit almost every day.  At least 30 minutes is continual walking on my treadmill.

I asked my husband to watch “Forks over Knives” with me so that he would have a clue about what I was doing.

To my surprise, he volunteered to join in.  He’s not “all” in.  He indulges some when he’s not at home, but he’s eaten every recipe that I’ve tried out (including some stunning failures).

There’s more and I will be back tomorrow…even if it’s just to say hello.

I’ve finished my bedtime fruit and veggie smoothie and it’s off to bed – hopefully to sleep. Sleep has been somewhat elusive as of late.

Pleasant dreams dear readers…

@#$*& and other words that nice ladies don’t say…

I was hanging out last Monday evening thinking that life had been a bit boring…that our life had fallen into a sort of rut and that nothing eventful had been happening.

So, after working all day at another part-time job that I picked up to try and get our financial situation on an even keel, I suddenly felt a couple of sharp stabbing pains in my lower abdomen.  They quickly went away.  No big deal, right?  By 10:00, I just didn’t feel too great.  I headed off to bed.

Two hours later and I am starting to throw up.  And have cramps across my mid-abdomen.

Let’s fast forward through the next couple of hours.  (I wish I could have).  Emergency room, abdominal hernia, intestines where they aren’t supposed to be, incarcerated colon, diverticulitis and a mightily impressive white blood cell count that bordered on septic.

Five days and one surgery later, I am back home and doing okay.  I’m resting and walking and trying not to think about the medical bills that will soon come rolling in.

My mantra – All shall be well…

There’s probably more that I could write, but I hear the recliner calling my name.  I’m not really moving forward in any discernible direction right now, but I am trying to stay positive.

Let’s just say that I haven’t given up.

Kummerspeck

The sharing of words from my “new to me” thrift store book purchase continues…

Today, I am dealing with the aftereffects of kummerspeck (noun, German, excessive weight gained through eating as a means of relieving stress or strong emotion).

Today, I finally feel like I have beaten back the flu, the allergies, and the virus that mimics allergies…all basically resulting in congestion, coughing, and exhaustion.  I feel almost back to normal and can take a full breath without gasping for air.  Air is good.  Air in the lungs is even better.

Now, I can start back with my resolve to eat healthier and walk at least 10,000 steps daily.

Over a year ago, after my surgery, I went from weighing in the 230 range to 180 pounds. Since then I have slowly gained back a lot of the weight.

First, a skipped day of walking and then a junior hamburger.

Then some hot weather so a couple more skipped walks.

Then a half-price milkshake from Sonic.  (Note to self:  half-price does not mean half-calories)

Then a bad day (or two).

It all adds up to weighing 200 pounds again.

I am definitely a stress eater.  Almost any food is comfort food for me.

Thus, the word of the day:  kummerspeck.

I have too many health risks to live like this.

I have too many things that I want to accomplish to risk my life like this.

Healthier choices.

Smaller portions.

Food is fuel, not a reward.

The reward is feeling better.

It matters what I eat.

I matter.

 

 

 

Doors

I took a shower today.  I woke up this morning and realized that I couldn’t actually remember the last one I took.  To be honest, days around here are a bit confused anyway. Too much T.V. and morphine (my sister, not me).  I’m thinking about getting one of those little whiteboards like they use in the hospital…Today is Saturday, August 27, 2016.

Anyway, I took a shower.  Please don’t judge.  Some days we have to grab the small wins and run with them…

Now, I’m thinking about doors.  This was prompted by a Caring Bridge post by a friend with stage IV colon cancer.  She just found out that she wasn’t accepted into a drug trial that she was hoping for.  “No further information.  Just a closed door”, she wrote.

I’m thinking about the slammed, closed and locked doors that I’ve faced in my past. About the disbelief, grief and pain those door have caused.  The teen-age crush that didn’t work out.  The job that I didn’t get.  The phone call that never came.  The dream that wasn’t realized.

I’m wondering how many times I accepted that unopened door as a permanent “no”.  The times I didn’t go looking for a different door.  A different way to access that dream.

And, I’m pondering the times I did look for an alternative route and a different portal.  Or sometimes the opportunities that I didn’t actively seek, but that presented themselves with time and patience.  The man I married, a different job…

Looking back, some of those closed doors were a blessing in disguise.  I wouldn’t have believed it at the time, but now it’s evident.  The teen-age crush that was based more on looks than compatibility.  The job that would have involved moving to another location and would have prevented me from being available for my sister now.

But doors that don’t open hurt when you run into them.  Sometimes, in hindsight, it may turn out to be for the best.  And sometimes, it may turn out that they were just stupid, closed doors that you  couldn’t get through.  You may never know the difference.

Still, there is hope in believing that there are many doors in life,  and most of them can be opened – with time, patience and discernment.

Today I will be in continued thought and prayer for those dealing with doorways…

Those standing at locked doors and looking for the next one.

Those hurt from the slamming of the door.

Those facing a door that is slowing closing and limiting their access both literally and figuratively.

Those locked behind a door wanting out but afraid and unsure of the next step.

Those who don’t have any doors available to them at all.

Those who can’t see the door because they don’t know where to look or are choosing not to.

And those standing in front of the door, but who are afraid to knock.

 

Hard to Say

Will this be an interesting post or not?  It’s hard to say at this point.  I’m not sure that I should be attempting to write at all.  This has not been a particularly interesting day in any respect.  Not a bad day.  Not a good day.  Just kind of a day.

Of note, I’ve reconnected with a friend who is battling a cancer battle.  I’ve just kind of ignored the whole situation for a while.  We don’t live close to each other and our lives don’t intercept at all any more except in that weird world that is the internet or interweb or whatever we are calling it now.  Pretty much a mystery to me.

Anyhow, I’ve started reading her Caring Bridge posts and texted her a bit today.   Can we say too many times that cancer sucks and that chemo sucks even more?  I don’t think so.  Cancer sucks and chemo sucks even more.

Her post, in combination with my less than stellar performing digestive system, prompted me today to schedule all of the diagnostic screening exams that I have ignored forever…Pap Smear, colonoscopy, and mammogram.  Ugh.  Ignoring things doesn’t mean they go away.  Sigh.  I don’t know what is more stressful – wondering if something is wrong or scheduling a procedure that’s gonna be unpleasant.

We place so much faith in our bodies and take for granted that they will do what we need them to do when we need them to do it.

A close family member is dealing with the effects of aging and a body that’s performed a lifetime of good and hard service for the betterment of others.  It’s worn out – her body that is.  It’s hard to deal with…aging and illness that force us to learn to ask for help and rely on the help of others.

We’re not meant to live this life alone.  Life is too darn hard.  Why is it so hard to reveal our weaknesses and allow others to be our superheroes?  I don’t mind helping someone out when they need it and I certainly don’t think less of them.  Why is that not a reciprocal act for me – for most of us?

I got a wonderful package in the mail the other day.  A friend responded to my post about giving up Sonic tea runs and sent me a gift of all kinds of wonderful teas.  When I spoke with her she said, “I have tea and you need tea.  We need to be in community and share what we have with each other.  That’s how it should be.”

Amen.

I lift up my cup of tea…Here’s to stepping out of our comfort zone and reaching out to someone in our life (or a stranger) and offering a helping hand.  Let’s not wait to be asked.  Some of us will never ask for help because we don’t know how, don’t realize we need to, or are afraid of rejection based on past experiences.

Let’s share our stories, our skills, our resources, and our time with each other.  Let’s not be alone and lonely.
